Ingredients:
4 medium russet or gold potatoes
1/4 cup olive oil
2-3 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp paprika (smoked or regular)
Fresh herbs (like rosemary or thyme), chopped, for garnish
Grated Parmesan cheese (optional)
Instructions:
Preheat your oven to 425°F (220°C).
Wash and dry the potatoes thoroughly. Slice them vertically into 1/2 inch pieces. Then, slice the potato pieces thinly (about 1/8 inch) without cutting all the way through. You can use skewers or chopsticks on either side of the potato to help prevent cutting all the way through. Place each potato slice onto a parchment lined baking sheet.
In a bowl, whisk together olive oil, minced garlic, salt, pepper, and paprika.
Brush the mixture generously over each potato, making sure it seeps between the slices.
Place the potatoes on a baking sheet lined with parchment paper or in a cast-iron skillet.
Bake in the preheated oven for 45-55 minutes, or until the potatoes are crispy on the outside and tender on the inside.
If desired, sprinkle with grated Parmesan cheese during the last 10 minutes of baking for extra flavor.
Remove from the oven and garnish with fresh herbs before serving.
