Ingredients:

  • 3 Russet potatoes

  • 2 tbsp olive oil

  • 2 tbsp melted butter

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme, chopped

  • 1/4 cup grated Parmesan

  • Salt & pepper to taste


Instructions:

  1. Prepare the Potatoes: Wash the potatoes thoroughly. Cut them in half vertically to create a sturdy base.

  2. Slice the Potatoes: Place chopsticks or wooden spoons on each side of the potato halves to prevent cutting all the way through. Slice the potatoes thinly, making sure not to cut all the way through.

  3. Season and Layer: Sprinkle a layer of grated Parmesan onto a parchment lined baking pan. Arrange the sliced potatoes on top of the Parmesan layer.

  4. Add Flavorings: Drizzle the potatoes with olive oil and melted butter. Sprinkle minced garlic, fresh rosemary, and thyme over the top. Season with salt and pepper to taste.

  5. Bake: Bake in a preheated oven at 425°F (220°C) for 45 minutes to 1 hour, or until the potatoes are golden and crispy.
